Weekend vibes

Most seedling planted. Lots of weeds uprooted. Baked some blueberry muffins and made a zucchini bake. Not a bad Saturday I don’t think. Hope everyone is enjoying the weekend.

  1. Well the muffins are Blueberry, almond and chia muffins and come from a book called beautiful food by Jody Vassallo.

    The zucchini bake is one my mum makes and was a favourite of mine as a child.

    5 eggs, beaten
    12 ozs grated zucchini
    1 large onion (we use brown)
    3 rashers of bacon, chopped
    1 cup grated cheese
    1/2 cup S.R flour
    1/2 cup plain flour
    1/2 oil (we use olive)
    salt and pepper

    Mix all ingredients and put in a greased lasagne dish. Place in a pre heated 180 degree C oven for 30-40 minutes. 50-60 minuted if you want it golden brown.

    Gluten free flour (and I think almond meal) work fine as well but doesn’t freeze well. Tends to go a bit soggy. The photo posted above, also has grated carrot and some chopped up rocket in it as well. It’s a very forgiving recipe. I know my Nan has made zucchini bake with corn in it also.
